1/2 cup room temp butter
1 cup sugar
1 1/2 cups applesauce
3 eggs
2 tsp almond extract
2 tsp vanilla extract
2 tsp baking powder
1 tsp baking soda
7 cups whole wheat flour
1/2 tsp salt
Mix sugar and butter very well until light in color. Add eggs, flavorings and applesauce. Mix well then add dry ingredients slowly. This dough will be thick and a little tacky. Divide into manageable balls and roll out to desired thickness onto a well floured surface. I keep mine thick at about 1/4 inch or a little more. The cookies will be nice and soft if you don’t roll them too thin. They will raise in the oven some. Cut into shapes and bake at 350 degrees till they slightly change color, about 10 minutes. Since they are whole wheat you won’t see much change. You can decorate them with frosting, sprinkles or glaze. I enjoy them them plain.

Way to go figuring out a better recipe. Just wanted to pop in and say hi and that I'm still here (running my butt off blog) and this past year has been one of figuring out how to eat less while not being able to move at all. I'm happy to report (since you visited my blog in the past) that I have lost 20 since January. Merry Christmas!

DeleteHey Becky! I just made these with my boys. They are so yummy! I think the almond extract gives it something awesome! I agree with you, they are delicious plain. (Although my 4 year old says, "They are missing something. Like sprinkles and frosting." haha) Thanks for sharing the recipe.
