Today’s Recipes

Chicken Fajitas
3lbs frozen boneless skinless chicken breasts
1 large red pepper sliced
1/2 large onion
1 tbsp taco seasoning
1 tsp cumin
Place all in a large cock pot and cook on low for 6-8 hours. After 6 hours remove chicken and slice or shed then return to pot to reheat.  Serve with flour tortillas and whatever toppings you enjoy.  We will have tomatoes, olives, lettuce, cheese, salsa and sour cream. This will make plenty of chicken for a few meals so place leftovers in freezer bags and place in the freezer for up to 3 months.

Apple Crisp in the Crock Pot

8 sliced apples

1/4 cup raisins
1 cup regular oats
1/2 cup whole wheat flour
1 tbsp cold butter
2 tsp cinnamon
12 packets of Truvia (you could use 1/2 cup brown sugar instead)
004006Place sliced apples and raisins in regular sized crockpot and in a separate bowl cut cold butter into remaining ingredients. Sprinkle oat mixture over apples and raisins. Cook on high for 3- 4 hours or on low for 6-8 hours. You may serve with vanilla ice cream or whipped cream.  We will have ours with just a little milk tonight.
