Oatmeal Raisin Cookies

Here is a new recipe I “healthified”.  The original recipe called for 1 lb of butter, 2 cups of each sugar and white flour of course and just 1 1/2 cups oats. (40 less caloreis, 4 grams less fat and sugar per cookie.)

3 eggs
1/4 cup butter
1 1/2 cups applesauce
1 cup brown sugar
1 cup granulated sugar
2 tsp vanilla extract
1/2 tsp cinnamon (optional)
1 1/2 tsp baking soda
1  tsp salt
6 cups whole wheat flour
3 cups regular rolled oats
2 cups raisins
 
Beat eggs until frothy.  Add butter, applesauce, sugar, and vanilla. Mix well then add dry ingredients and raisins.  Bake for 10 min at 350 degrees. This recipe make 96 cookies with my small cookie scoop.

  1. Have you tried to switch out the white sugar for honey? I may give it a try in June and let you know.

  2. Catherine, I was going to use honey or agave but I have had some requests for healthier recipes without any unusual ingredients. I don't know if most people have honey at home. I already increased the liquid content a lot using applesauce rather than all of the butter so I was nervous to do a liquid sugar substitute as well. I'll have to try it next time.
